Cookies galore


I couldn’t think of a perfect time to showcase the little baking skills I have except during Christmas. This holiday, I created my favorite chocolate chip cookies which I made as gifts to my friends. I’m a fan of cookies and making them is a great relief since I can tweak recipes to suit my taste. Plus, cookies have longer shelf life, about four weeks, as long as you store it in a tightly-covered jar.

So far, some of my friends have been asking me how I did it and so I’m sharing my personal recipe I know.

I use–

1 1/4 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 salt

3 dashes of McCormick cinnamon powder

1/2 cup butter

1/2 cup brown sugar

1/4 cup white sugar

1 small size egg

1 teaspoon vanilla essence

1 cup of chocolate chips

Mix flour, baking soda, baking powder, salt and cinnamon powder in a bowl.

In a separate bowl beat butter and both sugars until creamy. Add egg and vanilla essence.

Add flour in tranches and mix until just combined. Then add chocolate chips.

For added texture, of course you can add almonds or walnuts  and that would make a wonderful choco-almond or choco-walnut cookies. Same recipe can go for raisin cookies which I also make. Instead of choco chips just mix in 1 cup of good quality raisins.

Just a cup of coffee and I’m good to go… : -)
