Carrot Cake Muffins on Christmas Day

Merry Christmas! This is indeed the time of year when we can relax and enjoy lazing at our homes, having family reunions and welcoming “inaanaks” who make the time and effort to visit you at home. However, my “clan” opted for a family gathering ahead of Christmas day and so visited us here in our home last Saturday. So, here I am spending this special holiday quietly with my mom. And what better way to utilize the time before the holiday is over? Baking, that is.

It’s been a while since I baked and the thing that popped into my hungry mind is a carrot cake. I promised a friend that I would gift her a carrot cake for Christmas. So I made a batch.

It’s so simple and so easy to make. I bet kids would love to do this with their mom and dads this Yuletide season. I made mine simple, without any icing, to ward off that extra calories.

Carrot cake muffins:

2 cups all-purpose flour, sifted

3 teaspoons baking powder

1 teaspoon salt

2 teaspoon cinnamon powder

1 1/4 cups dark brown sugar

1 cup corn oil

3 eggs beaten lightly

1 teaspoon grated orange zest

1 teaspoon vanilla extract

1 cup grated carrot

Preheat over to 325 degrees F. Lightly grease muffin pans.

Combine all dry ingredients: flour, baking powder, salt, cinnamon, brown sugar in a large bowl.

In another bowl, combine corn oil, eggs, orange zest and vanilla extract.

Whisk the wet ingredients with the dry ingredients until the mixture is smooth.

Then fold in the grated carrot until well combined. Scoop mixture into prepared muffin cups.

Bake for 1 hour and 30 minutes or until a toothpick inserted in the middle comes out clean. Better yet, if you start to smell the aroma of the bread then you know the fun starts.

If you want to add icing, then you can try this recipe: beat together 1/2 bar of cream cheese, 1 tablespoon butter, 1 teaspoon lemon/orange zest until its light and fluffy. Then slowly add 1 1/2 cups of confectioner’s sugar into the mixture until everything is incorporated. Spread over muffins.
