Creamy Pork and Beans Pasta

These rainy days, I’m a lazy chef. Can’t get my creative juices out and just wish I can spend the whole day in bed snuggled under the pillows. But unfortunately, work, work, work, work, work…gets in the way. 😦

Recently, I’m trying to cut down on carbs and curb my unhealthy eating habits. I’m now doing something I thought I’ll never do again since my high school days: bring my own baon, (packed lunch) to work.

However, I just can’t resist pasta. I love it and I’m thinking today should be a cheat day. So what to do when you feel lazy but you need to cook ? Take whatever’s available at the pantry…

There’s one can of SPAM in my cupboard, a couple of string beans in the fridge, milk and some heavy cream, and of course, pasta noodles. Then I realized: I should make a pork and beans pasta!

So here’s my take on an easy and light dish:

1/4 cup string beans (cleaned and cut into 1/2 inch pieces, then blanched in pasta water)

1/4 cup milk

1/4 cup cream

boiled pasta noodles (I used ordinary spaghetti noodles)

salt and pepper to taste

2 Tbsp butter (unsalted)

2 Tbsp garlic (minced) and

1 can SPAM (meat sliced into cubes)


Sauté garlic on butter; once translucent add the cubed SPAM meat. Sauté until meat is a little toasted. Add the blanched string (green) beans quickly to the meat. Add milk and cream. Season with a little salt and pepper (careful the SPAM is already salty), then stir in pasta noodles.


Devour while hot! 😉
